Wylye Distillery: Wylye, Wiltshire
Wylye Distillery is a single malt whisky distillery at Windmill Farm in Wylye, Wiltshire. Its owner and distiller, Sam Barber, has set out to fill his warehouse before selling any whisky.
Where it is
The distillery is based at Windmill Farm in the Wylye Valley, Wiltshire. The grain comes from Manor Farm over the hill and is floor malted at Warminster Maltings, so every ingredient comes from within about 12 miles.
How the whisky is made
Unpeated, floor malted barley
A long, slow fermentation
Double distillation in Forsyth stills, with very specific cut points
Low wines are collected in the same tank as foreshots and feints, then charged to the spirit still the next day
New make is filled into a range of cask types from cooperages around the world
The approach
Sam Barber spends five days a week making and laying down whisky. According to Exploring English Whisky, he has not taken outside investment, and the aim is to build stock before any sales, which is unusual in English whisky where brands often sell gin or rum while waiting for their first whisky.
