Witchmark Distillery: Fonthill Bishop, Wiltshire
Witchmark Distillery is a distillery on the Fonthill Estate in Fonthill Bishop, near Salisbury in Wiltshire, England. It makes English whisky alongside gin and vodka, and it sits beside a brewery called Stone Daisy.
Where it is
The address is Fonthill Bishop, Salisbury, Wiltshire, SP3 5SG. The distillery is housed in a Grade II listed barn on the estate, according to the Wiltshire Marque, the county's local food and drink body.
How it works
Witchmark's own website says its barley comes from Fonthill Farm, a local regenerative agriculture system. The stills are powered by bio-liquid propane gas, and a 100kW solar array on the warehouse roof was installed in partnership with Nadder Community Energy.
Whisky starts as a beer wash. The Stone Daisy brewery provides that wash and also brews cask ales and keg, canned and bottled beer.
The range
The website describes plans for a signature single malt made from a blend of casks, plus single cask single malts, double cask single malts and mixed grain whiskies using malt, wheat and rye. Its gins and vodkas are made from neutral grain spirit distilled on site. At the time of the December 2024 tours announcement the range included Black Lime gin, London Dry gin, a vodka and a Wiltshire single origin gin.
Visiting
The visitor centre opened in late 2024. The tour covers how the neutral grain spirit is made and the whisky making process, and includes a Q&A on the history of the witch marks found on many of the estate's barns, followed by a guided tasting. The distillery also runs a gin school and cocktail evenings. Book and check opening times on the official site.
