Yoichi is the birthplace of Nikka Whisky. Masataka Taketsuru built it in 1934 on the coast of Hokkaido, chose a Scotland-like climate on purpose, and still uses traditional direct coal-fired pot stills.

History

Nikka's company timeline says Dai Nippon Kaju Co., Ltd, the predecessor of Nikka Whisky, was established on 2 July 1934, and construction of the Yoichi distillery was completed in October of that year. Whisky and brandy production started in 1936, and the first Nikka Whisky and Nikka Brandy launched in 1940. Masataka Taketsuru became president in 1943.

The company became The Nikka Whisky Distilling Co., Ltd. in 1952 and moved its headquarters to Tokyo. Asahi Breweries supported it with investment from that time, and Nikka formally joined Asahi Breweries in 2001.

Yoichi won attention abroad early in the modern era. In 2001, Yoichi Single Cask 10 Years Old received the highest score in a world whisky competition, which Nikka calls the greatest feat ever for a Japanese whisky at that time. In 2002 the Scotch Malt Whisky Society recognised Yoichi as Japan's first certified malt whisky distillery.

In 2014 and 2015 the NHK drama Massan told the story of Masataka and Rita Taketsuru and brought Nikka's history to a wider audience. In 2022, ten buildings at Yoichi distillery were designated Important Cultural Properties of Japan by the Agency for Cultural Affairs, and Nikka registered its head office address in Yoichi, Hokkaido.

Why Yoichi, Hokkaido?

Nikka says Taketsuru searched Japan for an environment similar to Scotland, with a cool climate, crisp air and fresh water, and found it at Yoichi. The town sits at the base of the Shakotan Peninsula, surrounded by mountains on three sides and facing the Sea of Japan. Winter snow melts into the Yoichi River, which supplies the distillery water.

Nikka also notes that the area once had barley, peat and coal from the Ishikari Plain, and that Yoichi malt is said to carry a slight scent of the sea.

Coal-fired stills

Nikka's page describes the pot stills at Yoichi as straight-head, with the lyne arm pointing downwards, and heated by traditional direct coal fire. Nikka says this is the same production method as Longmorn distillery in Speyside, where Taketsuru studied. The bottom of the pot still reaches over 1,000 degrees Celsius. The company says a skilled hand is needed to adjust the coal so the heat stays right, and that the method is rarely seen in the world today.

Cooperage

Unlike Scotland, where distilleries and cooperages traditionally operated separately, Nikka had to make its own barrels in Japan. When Taketsuru began production at Yoichi he brought in coopers who had made beer barrels. Nikka says he told them, I will make great whisky, you make great barrels. That cooperage expertise was later passed on to Miyagikyo and the Tochigi factory.

Range and milestones

  • Yoichi Single Malt: one of Nikka's main single malt brands. Yoichi Single Malt 12 Years Old launched in 1989.

  • Nikka Discovery series: Yoichi Single Malt Non-Peated in 2021, and Yoichi Single Malt Aromatic Yeast in 2022.

  • Yoichi Single Malt 10 Years Old limited edition: released in 2022.

  • Yoichi malt also forms the backbone of Taketsuru Pure Malt and Nikka blends, in Nikka's words a core for rich, complex whiskies.
