History in chapters

2013: trial maturation. The company bought new make from two domestic distilleries and began maturing it in Akkeshi, which convinced the team the climate would give the whisky its own character.

2015: construction starts. The site is wetland with soft ground down to about 50 metres, so the builders removed soil under the foundations and replaced it with polystyrene to even out the load.

2016: distilling begins. Forsyths staff travelled to Japan to install the stills and plant, and distilling started in October 2016.

2017 to 2020: warehouses. The first warehouse was full after about a year. A second followed in 2017, a rack warehouse beside the bay in February 2018, and a fourth rack warehouse on a hill overlooking the bay in April 2020.

Equipment and place

The official site describes straight head, onion shaped pot stills similar to some on Islay, with radiator heating and shell and tube condensers, plus a semi-lauter mash tun. Process water comes from the Homakai River, upstream of the Oboro River, in a wetland area. The distillery says it uses water that has passed through a peat layer, as on Islay.

Casks include bourbon and sherry, and also Japanese mizunara oak, with wine and rum casks also tried. Since March 2021 the area has been part of the Akkeshi-Kiritappu-Konbumori Quasi-National Park, and Lake Akkeshi and the Bekanbeushi wetland are a Ramsar site.
