Talisker is a single malt Scotch whisky distillery at Carbost, on the shore of Loch Harport on the Isle of Skye. Diageo, which owns it, describes it as the oldest working distillery on Skye. It was founded in 1830 by the MacAskill brothers, and for much of its life it was the only legal distillery on the island. This profile covers its history, owners, people, production, range and how to visit.

Talisker history, people and production

The history of Talisker

Sources differ on the first years. Wikipedia says Hugh MacAskill leased the site from the MacLeods, raised 3,000 pounds, built the distillery in 1830 and named it after his estate, Talisker, about five miles to the west rather than after the village of Carbost. It adds that the distillery opened at Carbost in 1831.

The Single Cask, a Scottish independent bottler, says the brothers took the lease of Talisker House in 1825 and took out their licence in 1830.

The early years were hard. The Single Cask reports that the local Free Church minister denounced the distillery and that by 1848 a bank had taken control. In 1879 (The Single Cask says 1880) the distillery was bought by a firm that became known as R. Kemp and Co. Its partners were A. G.

Allan, a procurator fiscal in Elginshire, and Roderick Kemp, a wine merchant from Elgin. Wikipedia records that the distillery was rebuilt between 1880 and 1887 and extended in 1900.

A new lease was agreed with the chief of Clan MacLeod in 1892 for an annual payment of 23 pounds 12 shillings and a ten-gallon cask of best-quality Talisker. By 1894 output had reached 2,000 gallons a week. The Single Cask adds that Kemp sold his share in 1892 and went on to buy Macallan, and that Talisker merged with Dailuaine in 1898.

In 1895 the business became a limited company with Thomas Mackenzie as managing partner.

In 1925, after Mackenzie's death, Talisker was acquired by the Distillers Company. Until 1928 the whisky was triple distilled. It then moved to double distillation, and the stillhouse kept its layout of two wash stills and three spirit stills.

Two fires shaped the site. On 12 August 1948 a fire broke out in the store. No whisky was lost, but grain and more than 100 empty barrels were. In 1960 a stillhouse fire destroyed the distillery. Five exact replicas of the original stills were built so the character of the spirit would be preserved, and distilling resumed in 1962.

In 1972 the stills were converted to steam heating and the maltings floor was taken out.

Distillers Company Limited was renamed United Distillers in 1987. In 1988 Talisker 10 Year Old was chosen as one of the Classic Malts. United Distillers merged with International Distillers and Vintners in 1998 to form United Distillers and Vintners, the spirits division of Diageo.

In 2024 Diageo proposed plans to redevelop the distillery and expand production. The plan was opposed in a public consultation and, according to Wikipedia, had not been approved by the local council as of December 2025. The Three Chimneys opened a dining space on the grounds in 2024, and Wikipedia says it received Michelin Recommended status in 2026.

How Talisker is made

Water comes from springs above the distillery that flow over peat. The malt is peated to roughly 18 to 22 ppm. Diageo and Wikipedia describe the malt as coming from the Muir of Ord area, which fits The Single Cask's note that it comes from Glen Ord Maltings.

Fermentation takes place in wooden washbacks. Talisker has an unusual feature at the stills: the lyne pipes have a loop that lets some of the vapour condense and run back for redistillation before the rest reaches the worm tubs. Wikipedia describes this as a swan neck arrangement, and The Single Cask refers to purifier pipes on the wash stills.

The spirit is most often matured in American oak. Diageo says the 10 Year Old is double distilled and aged for a minimum of 10 years in American oak casks.
