Where is Macardo?
The distillery is in Strohwilen, part of Amlikon-Bissegg in Thurgau. Its home is a new building built around a cheese dairy that was erected in 1904, and the old dairy now houses the distillery and a walk in shop on the ground floor.
How it works
Two custom made copper stills of 100 and 200 litres, fired with wood, and small batch distilling only.
The distillery mills its own malted grain, makes its own mashes and uses water from its own spring.
Grain and fruit come from Thurgau farmers, while the molasses for its rum comes from sustainable plantations in India and Nicaragua.
Energy comes from wood and solar power, and waste heat feeds a ground source heat pump. Distillery waste goes to a nearby biogas plant.
People
The website names Bartholomäus Fink, from Vorarlberg, as master distiller, working with owner Andy Bössow on new products.
Casks and range
Macardo says it buys new and used casks worldwide and stores them in a barrel store it calls Fasslager 4.0, developed with the Technische Hochschule Winterthur, where each cask sits on a load sensing beam that records contents, temperature and humidity. The range listed includes Swiss premium whisky, Thurgau gin, rum, vodka, vermouth, liqueurs, fruit distillates and grappa.
Visiting
The site offers distillery tours, courses, a bar and cigar lounge, events, guest rooms and a walk in shop. Its website is macardo.ch.
