History
Ger and Denis had been deep sea trawler men, while John was a research and development scientist. None had a background in distilling, so they worked out the process themselves, including making some stills by hand. The distillery began in Union Hall in West Cork and is now a major employer in Skibbereen.
How it is made
West Cork Distillers uses only Irish grains and malts some of its barley on site. It is described as the most southerly distillery on the Atlantic archipelago. It produces many whiskeys on contract for retail and other brands, and has released expressions sourced from other Irish distilleries as well as its own mature whiskeys.

From the official story
West Cork Distillers says it was formed in 2003 by childhood friends John O'Connell, Ger McCarthy and Denis McCarthy. The early years were spent in a room at the back of Denis's house in Union Hall with two small stills bought from a schnapps producer in Switzerland. In 2014 the business moved to a distillery in Skibbereen.
The official distillery page adds that John O'Connell came from a line of illegal poitin distillers, with his father from Coppeen in the Coolea Mountains. It also mentions the Rocket, a still reported to be the fastest in the world at the time, and says the new Marsh Road distillery in Skibbereen opened in 2020.
Scale today
The company says it works from a 12.5 acre site on Marsh Road with a distillation capacity of 16.5 million litres of pure alcohol. The distillery page lists 16 pot stills and 3 column stills for spirit, with 2 more stills dedicated to gin.
Five bottling lines run 24 hours a day, six days a week, and the page says 2,000 bottles are processed on site every hour. Seven warehouses on site hold up to 55,000 casks. The company says it has over 140 staff at Marsh Road and calls itself the largest wholly Irish owned distillery in the country.
The whiskey and other brands
The official story says the core West Cork Irish Whiskey range is triple distilled, matured for a minimum of three years and bottled on site. The company also makes whiskey and gin for retailers and well-known personalities, and has its own Garnish Island gin and Two Trees vodka.
Export reach is given as almost 70 countries in one place and over 70 countries in another on the same site, so treat the number as roughly 70.
