A farm first, a distillery second

According to the distillery, the Ahearn family has grown crops on Ballindoney Farm for as long as there are records. The farm lies in the Golden Vale of County Tipperary, an area known for rich soil and pure water. The distillery says it is that water and its home-grown barley that go into the spirit, so it can point to the field each whiskey comes from.

The people behind it

The distillery names Jennifer Nickerson as its managing director. It describes her as the only female whiskey distillery and poitin producer in Ireland. Her husband Liam is the sixth generation of the Ahearn family to grow and harvest barley on the land. They are joined by Jennifer's father Stuart Nickerson, a Scottish Master of the Quaich and an experienced whiskey maker, who chooses the casks for the Knockmealdowns small batch releases.

What it makes

The range on the distillery website includes the Watershed single malt Irish whiskey, which the distillery says won a Gold Medal at the 2025 Berlin International Spirits Competition. It also lists a Home Grown Barley Single Malt in a Rioja cask with a sake finish, awarded a Silver Medal at the 2025 Tokyo Whisky and Spirits Competition, and a mezcal finish version.

The distillery describes its Homegrown Single Malt as the first spirit distilled from barley grown on Ballindoney Farm. Other products listed include a port wine finish single cask limited to 258 bottles, the Knockmealdowns individually numbered small batch whiskey, an Irish apple brandy called The 80, a farmhouse gin and Rocking Rioja Gin.

From brand to distillery: 2016 to 2020

Tipperary Boutique Distillery describes itself as the shared project of Tipperary farmer Liam Ahearn, his wife Jennifer Nickerson and her father Stuart Nickerson, a Scottish whisky expert. The brand was established in 2016, years before the couple had a distillery of their own.

In July 2017 the company announced the first distillation of barley grown on the family farm at Ballindoney, Grange, Clonmel, Co. Tipperary. The spirit was made at another established Irish distillery, and the malted barley came back from a maltings in Inverness. At that stage planning permission had been granted for a distillery on the farm, which the company expected to employ up to twelve people locally.

A press release published in December 2020 says the distillery on the Ballindoney farm, near Cahir, was five years in the planning. It says the build was funded through the release of expressions that the couple had spirit, casked and finished themselves, together with funding from the Local Enterprise Office and the EU Leader programme.

Capacity and markets

  • At full capacity the distillery plans to produce 9 casks a week. In December 2020 it said it was at less than half of that.

  • The first whiskey made from the farm barley and distilled at another Irish distillery was released as the Tipperary Single Cask Release.

  • The company said its Watershed whiskey won a gold medal at the LA World Spirits Awards and was imported into the US by Skurnik Wines.

  • The same release lists shipments of Watershed, Knockmealdowns and single cask whiskeys to Russia, Germany, Italy, Belgium, Sweden, the UK and Korea.

The distillery also said in 2020 that it was considering gin and other white spirits. Its own website, tipperarydistillery.ie, lists the current range.
