Thy Whisky Distillery: Snedsted, North Jutland
Thy Whisky Distillery is a Danish organic single estate distillery on the Gyrup family estate near Snedsted in north-west Denmark.
Where it is
The estate, called Gyrup, covers about 500 hectares. It lies a short distance from Thy National Park, just north of Lake Ovesø. The distillery address is Gyrupvej 14, 7752 Snedsted, North Jutland.
The story so far
A farmstead has stood at Gyrup since the 1300s, and the estate has been farmed organically since 1773. The family has lived there for eight generations. Whisky Monkeys reports that in 2010 Nicolaj Nicolajsen, the founder, decided the family should use its own organic grain more fully by distilling whisky.
Early whisky was made in partnership with the Thisted brewery and the Nordisk Brænderi, with a malting house in Germany commissioned for the malt. The first whisky was bottled in 2014 as Thy Whisky No. 1 Kræn Klit.
At Christmas 2015 the family discussed building a distillery on the estate. Ellen Nicolajsen, Jakos Stjernholm, Marie Stjernholm and Andreas Poulsen moved home from Copenhagen to take part. The manor was renovated, with barrel storage in the old stalls and a distilling room in the old servants' quarters. A malting drum and a 1,000 litre mash tun went into use in 2018, and a 1,000 litre pot still arrived in 2019.
How it is made
The distillery produces about 50,000 litres of organic spirit a year from barley grown on the estate, with malt smoked over beech wood. It uses a single distillation in a copper pot still fitted with a purifier.
The range
Whisky Monkeys describes a core range planned for 2024 of three vintage releases: Thy Single Malt at 48% ABV, Thy BØG Single Malt at 50% ABV with 3,100 bottles in its first release, and Thy Spelt-Rye Whisky at 48.5% ABV with 2,900 bottles. Check the distillery's website for the current range.
