History and production
A one man distillery in Carrigart
Whiskykort says Baoilleach Distillery is at Carrigart in Donegal, overlooking Mulroy Bay, and is one of the smallest Irish whiskey distilleries. It began producing in late 2019, starting with poitin on a small pot still. Michael R O'Boyle runs it solo as founder and head distiller.
2022: a second pot still, two 3,000 litre fermenters and a larger mash tun were added. The first cask of Irish whiskey followed in June 2022
Local grain: Gran na hAite, the first whiskey with local grains, followed in 2023
Method: direct fire, small copper stills and a wide range of mash bills including malted barley, green barley, oats, rye, corn and peated grains
Releases: An Chead at 58.7% ABV and Donegal Mountain Dew, a five cask vatting at 52.1%
