Where is Timboon Railway Shed Distillery?
The distillery is in the town of Timboon in south western Victoria, in the old goods shed at the terminus of the Timboon railway line.
How the distillery started
According to Wikipedia, the distillery was opened by the owners of Timboon Fine Ice Cream, who hoped to diversify into a product with year round appeal instead of selling mostly in summer. It produced its first whisky in 2007.
Wikipedia also notes that Timboon has a history of distilling. An illegal still operator named Tom Delaney is said to have been producing 100 gallons of mountain dew whisky a week in the 1890s before he was arrested.
How the whisky is made
The malted barley is brewed off site by the Otway Estate microbrewery.
It is then distilled at the Railway Shed in a 600 litre copper still, custom made near Hobart.
The spirit is matured in small port casks.
What it makes
The main product is Timboon Single Malt. Seasonal products listed on Wikipedia include Irish cream, nocino, vodka, limoncello and apple liqueur. Timboon Single Malt received a bronze medal at the Australian Malt Whisky Awards in 2011.
