Caol Ila overlooks the strait between Islay and Jura and is one of the biggest producers on the island. This guide covers its history, owner, range and the questions people ask most.

Where is Caol Ila Distillery?

Caol Ila is near Port Askaig on the Isle of Islay, Scotland. The name comes from the Gaelic Caol Ìle, meaning Sound of Islay, in reference to the strait between Islay and Jura. It is pronounced kuh-LEE-luh.

Caol Ila history

Caol Ila was founded in 1846 by Hector Henderson. It did not fare well and changed hands in 1854, when Norman Buchanan, owner of the Isle of Jura distillery, took over. In 1863 the business was acquired by Bulloch Lade and Co of Glasgow, traders in whisky stocks. By the 1880s over 147,000 imperial gallons of whisky were produced there each year.

Bulloch Lade went into voluntary liquidation in 1920 and a consortium formed the Caol Ila Distillery Company Ltd. The Distillers Company took a controlling interest in 1927, and in 1930 Scottish Malt Distillers obtained all the shares. The distillery closed from 1942 to 1945 because of wartime restrictions on barley supply.

In 1972 the entire distillery was demolished. A larger one was built, designed by George Leslie Darge with glazed curtain walls to the still houses, and production resumed in 1974. The company eventually became part of Diageo.

Who owns Caol Ila?

Caol Ila is owned by Diageo.

Official website

Caol Ila production in more detail

ScotchWhisky.com Whiskypedia lists six plain-shaped stills with wash still charges of 20,000 litres and spirit still charges of 12,000 litres. Condensers are shell and tube. There are ten washbacks, eight wood and two steel, with a minimum fermentation of 55 hours. The mash tun is a lauter type taking a 13 tonne grist, the yeast is creamed, the filling strength is 63.5 per cent and new-make comes off at about 70 per cent.

The Single Cask guide quotes wash stills of roughly 19,000 litres and a fermentation of 55 to 60 hours, and says the malt comes from Port Ellen Maltings at around 35 ppm, the same specification as Lagavulin. Whiskypedia says the malt is mostly made in house and gives the spec only as heavily peated. Treat the malt source as unconfirmed until checked with Diageo. Whiskypedia names the water source as Loch Nam Ban in its facts panel, while other sources give Loch nam Ban.

Ownership through the years

  • 1846 to 1852: Henderson, Lamont and Co, founded by Hector Henderson

  • 1854 to 1857: Norman Buchanan

  • 1857 to 1920: Bulloch Lade and Company (The Single Cask dates its purchase to 1863)

  • 1920 to 1927: Robertson and Baxter, after a brief period under JP O'Brien

  • 1927 to 1986: Distillers Company Limited

  • 1986 to 1997: United Distillers

  • 1997 to now: Diageo

Unpeated runs and the blending role

Whiskypedia says Caol Ila experimented with unpeated malt in 1999. When the downturn came in the 1980s the distillery ran unpeated, Highland style spirit for blends, which helped keep it open. An unpeated batch is still made every year, with volumes set by the Diageo blending team forecasts. The Single Cask says around 95 per cent of output goes into blends, most notably Johnnie Walker, and that Bunnahabhain made the peated requirements during the silent period. Whiskypedia places that silent contraction in the 1980s, so check the exact dates before publishing.

From blend component to single malt

Whiskypedia notes that until 2002, when the 12 Year Old became the first permanent official bottling, malt drinkers had to look to independent bottlings. Its current range description lists the no age statement Moch, an 18 Year Old, a 25 Year Old, a Distillers Edition and annual special releases. Our draft range list above names a Cask Strength bottling, so confirm the current line up on the official Diageo page before publishing.

Capacity, rebuild and the visitor centre

The old distillery was demolished in 1972 and rebuilt with six stills in place of two, which made Caol Ila Islay's largest producer. A further revamp in 2011 added a new mash tun and more washbacks and lifted capacity to 6.5 million litres a year. In 2018 Diageo announced a new visitor centre built into the distillery warehouse, with a footbridge entry and a bar looking over the Sound of Islay to Jura. The Single Cask reports it opened on 25 August 2022 as part of Diageo's investment in Johnnie Walker homes, with tours from around 21 pounds. Prices and hours change, so check before travelling.

Whiskypedia gives the visitor address as Caol Ila Distillery, Port Askaig, Isle of Islay, PA46 7RL, with opening hours that vary by season. Its page lists 9am to 5pm from March to October and shorter days from November to February, and that listing may predate the 2022 reopening.

How to say it

The Single Cask gives the pronunciation as Cull EE-la, with the stress on the second part. The name is Gaelic for Sound of Islay.
