Who and where
Bimber was founded in 2015 by Dariusz Plazewski and Ewelina Chruszczyk, who emigrated from Poland to London in 2003, according to trade sources. It is in the west London suburb of Greenford. Distillation began in May 2016. Master of Malt reported in 2018 that Plazewski had lived and worked in London for 17 years before deciding to make whisky in the city he calls home.
How it is made
The distillery website sets out its craft as separate pages on barley, floor malting, fermentation, a copper pot still, cooperage and the blender's art. It also lists tours and a Bimber Klub. The website is behind an age gate, so details of each step were not readable.
Expansion plans
Whiskybase describes Bimber as a London distillery founded in 2015. Drinks International reported in March 2021 that Bimber confirmed plans for a separate Scotch whisky distillery, called Dunphail, in Moray. The proposal was to convert an existing farm into a distillery with a capacity of 200,000 litres of alcohol.
Plans for Dunphail: a floor malting facility and traditional kiln to process all of its locally sourced barley, a visitor centre, blending rooms and dunnage warehousing
Timing: distillation was expected to start in 2022, pending planning consent and construction
Sustainability: a new forest on the grounds, with a tree planted for every cask purchased
Bimber: founder director Dariusz Plazewski said the company was also exploring London sites to expand production, and that Dunphail would run separately from Bimber
Sources and gaps
Sources: search listings for Taste Atlas, Fine and Rare Wines, Distilando, Drinks Retailing News and Master of Malt, plus the bimberdistillery.co.uk menu (read 20 October 2026). Wikipedia has no page for Bimber. This is the thinnest profile in the batch. Not verified: stills, capacity, ownership, range, awards, tour details. Expand before publishing.
