Where it is

The distillery sits at Glen Ireh Estate in Perth, just south of Launceston in northern Tasmania. It is about 15 minutes from Launceston. There is a cellar door and shop on the estate, and an Adams Distillery Bar.

History

Adams Distillery started in 2016, when Adam Pinkard and Adam Saunders joined forces at Glen Ireh Estate to turn a whisky idea into a working single malt distillery. They drew on the experience shared by other producers in Tasmania's craft whisky scene. Professor Bernie later joined the team, and the range grew to include dry gin and a navy strength gin.

In February 2021 a fire destroyed the distillery's facilities, although the maturing whisky stocks survived. The business went on to rebuild with new investors and a broader range of whisky, gin and other spirits.

How the whisky is made

The single malt is made from locally grown Tasmanian barley. Over the years the distillery has used several malt bills, including pilsner malt, classic Tasmanian barley, roasted and crystal malt, heavily roasted barley and barley smoked with beachwood. It has also grown its own estate barley, with a first release planned for December 2022.

Mashing takes place in a custom-made Tasmanian mash tun. The wash ferments for four to seven days and is distilled in handcrafted copper pot stills, with the hearts reduced to 63.4% ABV before filling into casks.

The distillery is known for its own sloshing process, in which spirit is moved through casks to build colour and aroma. Ex-bourbon casks form the base of the Signature Series, with ex-pinot noir, sherry, port, maple syrup and Tipo Jerez casks used alongside them.

The range

The core whisky is the Tasmanian Single Malt Signature Series, bottled at 42% and 59% ABV. Limited releases have included a Bourbon (Prosecco Seasoned) single malt at 47% and The Temptation Edition gift set. The distillery also sells dry gin, sloe gin and a coffee whisky liqueur.

Awards

The Adams Peated Port Slosh cask was named Best Australian Single Cask Malt at the World Whiskies Awards 2021. The Temptation Edition won a Gold Medal at the 2021 Design Gold Awards. Its gins and liqueurs have also won medals, including Gold for the Tasmanian Sloe Gin in 2025.
