History of Destileria y Bodega Abasolo

Abasolo was established to place Mexican corn and its long cultural history at the centre of whisky making. The Jilotepec site was formerly used for growing and drying maize, and today brings restored buildings together with a modern distillery inspired by traditional Mexican grain stores.

Rather than adapt an imported Scotch or bourbon mash bill, Abasolo uses a locally important variety of corn called cacahuazintle. The architecture, grain growing and production process are central to the brand identity, and the company works with farmers from the surrounding high-altitude region.

People and ownership

People associated with the distillery’s history include The Abasolo production team, associated with Casa Lumbre. Names refer to documented roles during the venture and should not be taken as an assertion about unchanged present ownership.

Whisky production and maturation

Its distinctive process begins with nixtamalisation, in which corn is cooked with alkaline limewater, then soaked, washed and roasted before milling. This traditional Mexican food technique produces a different grain character from ordinary corn milling.

A smaller share of corn is malted to assist starch conversion before fermentation. The producer describes fermentation lasting more than 120 hours, followed by double copper distillation and maturation in new and used oak barrels in an open-sided warehouse.

Destileria y Bodega Abasolo whisky bottles and releases

The bottle range below distinguishes core expressions from limited or historically significant releases where sources permit. Whisky Clan has not personally tasted these bottles for this guide.

The core expression is distributed in more than one pack size, but a packaging variation is not a separate whisky recipe.

Awards and milestones

Abasolo is distinctive for native corn and the adoption of nixtamalisation. The official material does not establish a broad age-stated whisky range, so individual award claims should be checked on the exact expression.
