History
William Allan acquired the Guelph mill in 1832 and the Allan family expanded the complex over the following decades.
By the mid-nineteenth century the property included a distillery, cooperage, blacksmith shop and grist/flour mill.
Municipal and archival sources describe Allan's Mill and Distillery as one of Guelph's largest businesses before financial difficulties and fires ended the original operation. A modern Spring Mill Distillery opened on the historic site in 2019 but is a separate business.
Production
Historic Canadian whisky production formed part of the Allan industrial complex.
The site included its own cooperage and grain-processing infrastructure.
Modern Spring Mill whisky is separate from original Allan family production.
Whisky range and legacy
Bottle / range | Status | Style | Notes |
|---|---|---|---|
David Allan / Allan's whisky | Historic | Canadian whisky | Historic Guelph production |
Spring Mill whisky | Modern separate producer | Current Canadian whisky | Do not conflate with original Allan's Distillery |
Rare and limited releases
Historic bottlings require exact provenance checks. A reused brand name or a modern producer on the same site does not prove continuity with the original distillery.
Visiting Allan's Mill & Distillery
The historic site has been redeveloped and now includes the separate modern Spring Mill Distillery. Visitors should distinguish the original Allan's Mill history from the current producer.
